I noticed in this set the two knights on horses picture inventory do not match
the figure inventories, also in the set inventory the triple plumes are not shown

The triple plumes are part of the minifig inventories.

Figures are built according to instructions, and set pictures of this era were
occasionally wrong/different to the actual inventory.

Minifigures on BrickLink are defined by how they are first built in the instructions.
I have attached an image of the instructions for this set that show the minifigure
builds and an image of the current minifigures in the BrickLink inventory. Everything
looks proper since the triple plumes are included in the minifigure inventories.

I think the issue is the helmet colour, as they are the same in the instructions
but different in the picture where the blue torso has the grey helmet.

Hmmm. You are right. I didn't even notice that because I was looking for
plumes just being attached. However, the end of the instructions fixes that error
from the beginning of the instructions.
