| How do some pieces only have 2 known colors but the ones being sold have so many
more colors. LIKE HOW

Sellers not knowing their colors, listing mistakes, non-production parts, etc.
Which parts are you referring to?

One way, but not the only way (see the other reply) is leakage from the model
shops. The official model shops (where they built those special builds and large
models) were able to obtain almost any part in almost any color. Sometimes those
orders resulted in a surplus of a particular part in an unusual color. I vaguely
recall a post on LUGNET, from someone who had a tour of a model shop (possibly
pre-BL) who had seen parts otherwise not available in specific colors.

Here is a funny story I heard directly from a long-time personal friend who had
a rare opportunity many years ago to be given an authorized tour of the Billund
Model Shop AND their vast Parts Warehouse.
It happened back in the days before digital cameras, so my friend had a large
camera case for a full-sized film camera and large lens. He and his group were
allowed to take photos of the model shop and the parts warehouse, which he did.
Then, he placed the camera back inside the camera case purely out of habit.
The visitors were also allowed to take whatever parts they wanted from the storage
tubs. Their time was limited, of course, so they had to hurry to see all the
goodies and grab some.
Well, nobody had expected or prepared for this, so most people had only their
pockets to stuff parts into. Right around the time the tour leader announced
it was almost time to leave, my friend finally had the bright idea to remove
his camera and lens from the case, hang it around his neck, and FILL his camera
case with model shop goodies. So, in the last 2 minutes or so, my friend switched
from picking onesies of parts to as much as he could grab as fast as he could.
If only he had thought of that 20 minutes earlier....
It has been too many years for me to remember what good parts he did get, and
the photos were never made public due to the usual LEGO legal Non-Disclosure
Agreement he signed. But it still strikes me as a funny story.

As above, and also for parts in new sets that have not yet been inventoried.
